The Story Behind It

The Tale of Asida

Asida, a thick wheat or sorghum porridge, is an ancient staple across Sudan, South Sudan, and much of the wider Nile Valley and Arab world. Shaped into a mound and served with a savory stew poured over it, it carries ceremonial weight in some South Sudanese communities.

Ingredients

Scale:· 6 servings
  • 3 cups sorghum or millet flour
  • 4 cups water
  • Pinch of salt
  • 1 tablespoon ghee or butter, for shaping
  • 1 tablespoon vegetable oil
  • Stew or sauce for serving

Instructions

  1. 1Bring the water to a boil in a heavy pot.
  2. 2Gradually whisk in the sorghum flour, a little at a time, to avoid lumps.
  3. 3Reduce heat to low and continue stirring vigorously with a sturdy spoon.
  4. 4Cook, stirring constantly, until the mixture thickens into a smooth, stiff dough, about 15 minutes.
  5. 5Add salt and continue stirring until fully combined and no longer sticky.
  6. 6Shape the dough into a smooth mound using a wet spoon.
  7. 7Serve warm with a savory stew, meat sauce, or vegetable soup poured alongside.
