The Story Behind It

The Tale of Vetkoek (South African Fried Dough Bread)

Story updated

Vetkoek, literally "fat cake" in Afrikaans, is a fried dough bread whose roots trace to Dutch settlers at the Cape and, more specifically, to the Voortrekkers of the 1830s, who needed portable, durable food for their long treks into the interior. Also known by its Xhosa and Zulu name, igwinya, it's a beloved comfort food sold by street vendors nationwide.

Ingredients

Scale:· 10 servings
  • 4 cups all-purpose flour
  • 2 tsp instant yeast
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 1 1/2 cups warm water
  • 2 tbsp oil
  • Oil, for deep frying

Instructions

  1. 1Mix flour, yeast, sugar, and salt in a large bowl.
  2. 2Add warm water and oil and knead into a smooth, elastic dough, about 8 minutes.
  3. 3Cover and let rise in a warm place until doubled, about 1 hour.
  4. 4Punch down and divide into golf-ball-sized portions, shaping into rounds.
  5. 5Let the shaped pieces rest, covered, for 15-20 minutes.
  6. 6Heat oil to 350°F (175°C) and fry the dough balls in batches until deep golden brown and cooked through, about 4-5 minutes per side.
  7. 7Drain on paper towels and serve warm, split open and filled with mince curry or jam.
