The Tale of Braai Boerewors with Chakalaka
Boerewors, "farmer's sausage," was developed by Dutch and Afrikaner settlers and is even regulated by South African law to guarantee a minimum meat content. Chakalaka, a spicy vegetable relish whose exact origin is murky but often linked to Johannesburg's mining townships, joins it at the braai, South Africa's communal barbecue tradition.
Ingredients

- 1 kg boerewors sausage (coiled beef and pork sausage)
- 2 onions, sliced
- 2 carrots, grated
- 1 red bell pepper, sliced
- 2 tomatoes, chopped
- 2 tablespoons curry powder
- 1 can baked beans
- 1 chili, chopped
- 2 tablespoons oil
Instructions
- 1Prepare a hot charcoal braai (grill) or preheat a grill pan.
- 2Coil the boerewors and secure with skewers, or grill in a long coil directly.
- 3Grill the boerewors for 20-25 minutes, turning occasionally, until browned and cooked through.
- 4Meanwhile, heat oil in a pan and sauté onions, carrots, and bell pepper until softened.
- 5Add curry powder and chili, cooking for 1-2 minutes until fragrant.
- 6Stir in the tomatoes and baked beans, simmering for 10-15 minutes until thickened.
- 7Slice the grilled boerewors into portions.
- 8Serve the boerewors hot alongside the chakalaka relish and pap or bread.
