The Tale of Suqaar

Suqaar, quickly stir-fried diced meat, reflects the meat-centered diet of Somalia's traditionally nomadic pastoralist communities, seasoned with spices that arrived through centuries of Arab and South Asian trade across the Indian Ocean. It's a fast, everyday dish built for a culture on the move.

Ingredients

Scale:· 4 servings
  • 600g beef or goat meat, cut into small cubes
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 green chili, chopped
  • 1 tablespoon xawaash spice blend
  • 3 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. 1Heat oil in a large skillet or wok over high heat.
  2. 2Add the cubed meat and sear quickly on all sides until browned.
  3. 3Add the onion and garlic and cook until softened, about 3-4 minutes.
  4. 4Stir in the xawaash spice blend, coating the meat evenly.
  5. 5Add the tomatoes and chili, cooking until the tomatoes soften and release their juices.
  6. 6Continue cooking over medium-high heat until the meat is cooked through and the sauce has reduced slightly.
  7. 7Garnish with fresh cilantro.
  8. 8Serve hot with rice, spaghetti, or canjeero flatbread.
