The Tale of Ngali Nut Soup

Ngali nut soup is built on the ngali nut, a canarium nut native to the Solomon Islands and wider Melanesia, used in cooking long before European contact. Its rich, oily character makes it a valued traditional ingredient, and the soup remains a distinctly local specialty.

Ingredients

Scale:· 4 servings
  • 1 cup ngali nuts (or substitute macadamia nuts), toasted and ground
  • 3 cups chicken or vegetable broth
  • 1 onion, chopped
  • 1 cup pumpkin, diced
  • 1 cup coconut milk
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. 1Toast the nuts lightly in a dry pan until fragrant, then grind into a coarse paste.
  2. 2Heat a splash of oil in a pot and sauté the onion and garlic until softened.
  3. 3Add the pumpkin and broth, and bring to a simmer.
  4. 4Cook until the pumpkin is tender, about 15 minutes.
  5. 5Stir in the ground nut paste and coconut milk.
  6. 6Simmer for another 10 minutes, stirring occasionally, until the soup thickens slightly.
  7. 7Season with salt and pepper.
  8. 8Serve hot as a starter or light meal.
