The Tale of Motu (Cassava Pudding)

Motu, a cassava pudding, uses cassava, a South American crop that became a Pacific staple centuries ago, grated and mixed with coconut cream before being cooked in an earth oven or wrapped in leaves. It's traditional Solomon Islands dessert, simple and deeply tied to local ingredients.

Ingredients

  • 1 kg cassava, peeled and grated
  • 2 cups coconut cream
  • 1/2 cup sugar
  • 1 ripe banana, mashed
  • Banana leaves for wrapping
  • Pinch of salt

Instructions

  1. 1Squeeze excess moisture from the grated cassava.
  2. 2Mix the cassava with mashed banana, sugar, half the coconut cream, and salt until well combined.
  3. 3Wrap portions of the mixture tightly in banana leaves, forming parcels.
  4. 4Steam the parcels over boiling water for 45-50 minutes until firm and cooked through.
  5. 5Meanwhile, warm the remaining coconut cream gently in a saucepan.
  6. 6Unwrap the cooked pudding and slice into pieces.
  7. 7Serve warm, drizzled with the warm coconut cream.
