Ingredients

  • 2 cups rice
  • 1 can coconut milk
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 4 whole small reef fish, cleaned
  • Oil for frying
  • Flour for dusting
  • Lime wedges for serving

Instructions

  1. 1Combine rice, coconut milk, water, and salt in a pot; bring to a boil, then reduce heat and cover.
  2. 2Simmer the rice for 18-20 minutes until tender and liquid is absorbed.
  3. 3Meanwhile, dust the fish lightly with flour and season with salt.
