Ingredients

  • 1 kg chicken pieces
  • 20 young taro leaves, washed
  • 2 cups coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 lemon, juiced

Instructions

  1. 1Season the chicken pieces with salt and set aside.
  2. 2In a large pot, layer half the taro leaves on the bottom.
  3. 3Place the chicken pieces, onion, and garlic on top of the leaves.
  4. 4Cover with the remaining taro leaves.
  5. 5Pour the coconut milk over everything and add the lemon juice.
  6. 6Cover tightly and simmer over low heat for 40-45 minutes until the chicken is cooked and the leaves are tender.
  7. 7Adjust seasoning to taste.
  8. 8Serve hot with rice or boiled taro.
