The Tale of Štruklji
Štruklji, rolled dumplings with sweet or savory fillings, date back to medieval Slovenia and now come in more than 70 regional variations, from cottage cheese and walnut to buckwheat and tarragon. They're considered one of the most representative dishes of Slovenian cuisine.
Ingredients

- 400g all-purpose flour
- 2 eggs
- 500g cottage cheese
- 100g sour cream
- 50g butter, melted
- 1 tablespoon breadcrumbs, toasted
- Salt to taste
- Water as needed for dough
Instructions
- 1Make a dough with flour, eggs, a pinch of salt, and enough water to form a smooth, elastic ball.
- 2Cover and rest the dough for 30 minutes.
- 3Mix the cottage cheese with sour cream, an egg, and a little salt to make the filling.
- 4Roll the dough out very thin on a floured cloth.
- 5Spread the cheese filling evenly over the dough and roll it up into a long log using the cloth to help.
- 6Wrap the log in cloth and simmer in a large pot of water for 25-30 minutes.
- 7Unwrap and slice the roll into rounds.
- 8Drizzle with melted butter and toasted breadcrumbs before serving.
