The Tale of Satay with Peanut Sauce
Satay is generally traced to Javanese street vendors in Indonesia, likely inspired by skewered kebabs brought by Arab and South Asian traders through the archipelago. It spread across the Malay world and became a defining dish of Singapore's multicultural hawker centers, grilled to order and served with peanut sauce.
Ingredients

- 600g chicken thigh or beef, cut into strips
- 2 tablespoons ground turmeric, coriander, and cumin (mixed)
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- Wooden skewers, soaked in water
- 1 cup roasted peanuts, ground
- 1 cup coconut milk
- 2 tablespoons tamarind paste
- 1 tablespoon chili paste
Instructions
- 1Marinate the meat strips in the ground spice mix, soy sauce, and sugar for at least 1 hour.
- 2Thread the marinated meat onto soaked wooden skewers.
- 3Grill the skewers over hot charcoal or a grill pan, turning frequently, for 10-12 minutes until charred and cooked through.
- 4Meanwhile, simmer ground peanuts, coconut milk, tamarind paste, and chili paste in a saucepan.
- 5Cook the peanut sauce over low heat, stirring frequently, for 10 minutes until thickened.
- 6Adjust the peanut sauce seasoning with sugar or salt as needed.
- 7Serve the grilled satay skewers with the warm peanut sauce, cucumber, and rice cakes.
