The Tale of Riz Coco
Riz coco, coconut rice, is a simple Creole staple built from Seychelles' abundant coconut palms and shaped by the islands' blend of French colonial and African cooking. It's the everyday accompaniment to fish and curry, rather than a dish with any single documented inventor.
Ingredients

- 2 cups rice
- 1 can coconut milk
- 1 1/2 cups water
- 1/2 teaspoon salt
- 1 tablespoon butter or oil
- 1 pandan leaf (optional)
Instructions
- 1Rinse the rice thoroughly under cold water.
- 2Combine rice, coconut milk, water, and salt in a pot.
- 3Add the pandan leaf if using, along with butter.
- 4Bring to a boil, then reduce heat to low and cover tightly.
- 5Simmer for 18-20 minutes until the rice is tender and liquid absorbed.
- 6Remove the pandan leaf and fluff the rice with a fork.
- 7Serve as an accompaniment to curries or grilled fish.
