Poisson grillé Kreol, grilled fish prepared Creole-style, reflects Seychelles' fishing-based economy and the French Creole marinade and grilling techniques layered onto local spices. It's straightforward, everyday island cooking built around whatever the day's catch brings in.

Ingredients

Scale:· 4 servings
  • 4 whole reef fish or fish fillets
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 chili pepper, minced
  • 2 tablespoons oil
  • 1 teaspoon salt
  • Fresh coriander for garnish

Instructions

  1. 1Score the fish lightly on both sides.
  2. 2In a bowl, mix lime juice, garlic, ginger, chili, oil, and salt to make a marinade.
  3. 3Rub the marinade over the fish, inside cavities if whole, and let sit for 20 minutes.
  4. 4Preheat a grill or grill pan to medium-high heat.
  5. 5Grill the fish for 5-7 minutes per side until charred and cooked through.
  6. 6Baste occasionally with remaining marinade while grilling.
  7. 7Garnish with fresh coriander before serving.
  8. 8Serve with rice and a side salad.
