The Tale of Poisson Grillé Kreol
Poisson grillé Kreol, grilled fish prepared Creole-style, reflects Seychelles' fishing-based economy and the French Creole marinade and grilling techniques layered onto local spices. It's straightforward, everyday island cooking built around whatever the day's catch brings in.
Ingredients
Scale:· 4 servings
- 4 whole reef fish or fish fillets
- Juice of 2 limes
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 chili pepper, minced
- 2 tablespoons oil
- 1 teaspoon salt
- Fresh coriander for garnish
Instructions
- 1Score the fish lightly on both sides.
- 2In a bowl, mix lime juice, garlic, ginger, chili, oil, and salt to make a marinade.
- 3Rub the marinade over the fish, inside cavities if whole, and let sit for 20 minutes.
- 4Preheat a grill or grill pan to medium-high heat.
- 5Grill the fish for 5-7 minutes per side until charred and cooked through.
- 6Baste occasionally with remaining marinade while grilling.
- 7Garnish with fresh coriander before serving.
- 8Serve with rice and a side salad.
