Ladob bannan is a Seychellois Creole dessert of bananas gently stewed in coconut milk with vanilla and nutmeg, reflecting the islands' blend of African, French, and Indian Ocean influences. It's built around two of Seychelles' most abundant crops, bananas and coconuts, prepared simply and eaten warm.

Ingredients

  • 6 ripe bananas, sliced thick
  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 1/4 teaspoon vanilla extract
  • 1 pinch salt
  • 1/2 cup sweet potato, cubed (optional)

Instructions

  1. 1Combine coconut milk, sugar, cinnamon stick, and salt in a saucepan.
  2. 2Bring to a gentle simmer over medium heat, stirring to dissolve the sugar.
  3. 3Add the sweet potato cubes if using, and simmer for 10 minutes until nearly tender.
  4. 4Add the sliced bananas to the pot.
  5. 5Simmer gently for another 10-12 minutes until the bananas soften and absorb the coconut milk flavor.
  6. 6Stir in the vanilla extract just before removing from heat.
  7. 7Remove the cinnamon stick.
  8. 8Serve warm or chilled as a dessert.
