The Tale of Ladob Banann

Ladob banann, essentially the same dish known elsewhere as ladob bannan, stews ripe bananas in coconut milk with vanilla and nutmeg. The spelling reflects variation in written Seychellois Creole (Kreol), and it remains a beloved everyday Creole dessert across the islands.

Ingredients

Scale:· 4 servings
  • 6 ripe bananas or plantains, sliced
  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1 cinnamon stick
  • 1/4 teaspoon nutmeg
  • 1 pinch salt
  • 1 teaspoon vanilla extract

Instructions

  1. 1Combine the coconut milk, sugar, cinnamon stick, nutmeg, and salt in a saucepan.
  2. 2Bring to a gentle simmer over medium heat.
  3. 3Add the sliced bananas to the coconut milk mixture.
  4. 4Simmer gently for 12-15 minutes until the bananas are soft and the sauce has thickened slightly.
  5. 5Stir in the vanilla extract.
  6. 6Remove the cinnamon stick.
  7. 7Serve warm as a dessert or side dish.
