The Tale of Kat Kat Bannan (Green Banana Stew)
Kat kat bannan, green banana stew, gets its name from the chopping sound of preparing unripe bananas, which are simmered with coconut milk and spices into a comforting Creole dish. It reflects the resourceful, everyday cooking style found across Seychellois households.
Ingredients
Scale:· 4 servings
- 6 green (unripe) bananas, peeled and chunked
- 1 cup coconut milk
- 300g smoked fish or salted fish, flaked
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 thumb ginger, grated
- 1 sprig fresh thyme
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- 1Heat oil in a pot and sauté onion, garlic, and ginger until softened.
- 2Add the flaked smoked or salted fish and stir briefly to combine.
- 3Add the chunked green bananas and thyme, stirring to coat in the aromatics.
- 4Pour in the coconut milk and enough water to just cover the bananas.
- 5Bring to a simmer, then cover and cook for 20-25 minutes until the bananas are tender and the sauce has thickened.
- 6Mash some of the banana pieces against the side of the pot to thicken the stew further.
- 7Season with salt and pepper.
- 8Serve warm as a hearty side or light main.
