Kari zourit, octopus curry, reflects Seychelles' place along Indian Ocean trade routes that carried curry spices to the islands, paired here with the reef octopus that's abundant in local waters. It's a Creole dish that fuses African, French, and Indian culinary influences into one pot.
Ingredients

- 1 kg octopus, cleaned and tenderized
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 cup coconut milk
- 2 tomatoes, chopped
- 1 tablespoon tamarind paste
- 3 tablespoons oil
Instructions
- 1Cut the octopus into bite-sized pieces.
- 2Heat oil in a large pot and sauté onion, garlic, and ginger until fragrant.
- 3Stir in curry powder and cook for a minute until aromatic.
- 4Add the tomatoes and cook until they soften into a sauce.
- 5Add the octopus pieces and stir to coat in the spices.
- 6Pour in the coconut milk and tamarind paste, then bring to a gentle simmer.
- 7Cover and cook for 35-40 minutes until the octopus is tender.
- 8Serve hot with steamed rice.
