The Story Behind It

The Tale of Mutabbaq

Mutabbaq, a folded, stuffed savory pancake, is believed to have Yemeni and Hadhrami roots, carried across the Arabian Peninsula and, via Arab traders, all the way to Southeast Asia where it became murtabak. Its name means "folded" in Arabic, describing the technique that defines the dish.

Ingredients

Scale:· 4 servings
  • 4 sheets phyllo or spring roll pastry
  • 300g ground beef or lamb
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 1 bunch green onions, chopped
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. 1Cook the ground meat with onion, curry powder, salt, and pepper in a skillet until fully browned.
  2. 2Remove from heat and let cool slightly, then stir in the beaten eggs and green onions.
  3. 3Lay a pastry sheet flat and place a portion of the filling in the center.
  4. 4Fold the pastry over the filling into a tight square or rectangular parcel.
  5. 5Heat oil in a large skillet over medium heat.
  6. 6Fry the parcels until golden and crisp on both sides, pressing gently to seal.
  7. 7Drain on paper towels.
  8. 8Slice and serve hot, often with a side of pickles or salad.
