Ingredients
- 3 cups basmati rice, soaked
- 3 lbs chicken pieces, bone-in
- 2 onions, chopped
- 3 tomatoes, chopped
- 1 tbsp kabsa spice blend
- 1/2 tsp turmeric
- 4 green cardamom pods
- 2 bay leaves
- 1 cinnamon stick
- 1/4 cup raisins
- 1/4 cup toasted almonds
- 3 tbsp oil or ghee
- Salt, to taste
Instructions
- 1Heat oil and brown the chicken pieces on all sides, then remove and set aside.
- 2In the same pot, sauté onions until golden, then add tomatoes, kabsa spice, turmeric, and whole spices.
- 3Return the chicken to the pot, add water to cover, and simmer 30 minutes until the chicken is cooked through.
- 4Remove the chicken and strain the broth, reserving both.
- 5Add the soaked rice to the broth and cook covered on low heat for 18-20 minutes until tender.
- 6Broil or pan-sear the chicken pieces briefly until golden.
- 7Mound the rice on a platter, top with chicken, and garnish with raisins and toasted almonds.
