Ingredients

- 4 firm white fish fillets
- 2 green (unripe) bananas, peeled and grated
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1/4 cup palm oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- 1Season the fish fillets with lime juice, salt, and pepper and set aside.
- 2Heat the palm oil in a skillet and sauté onion and garlic until fragrant.
- 3Add the chopped tomatoes and cook until they form a thick sauce.
- 4Stir in the grated green banana and a splash of water, simmering until it thickens into a sauce.
- 5Gently place the fish fillets into the sauce.
- 6Cover and simmer on low heat for 12-15 minutes until the fish is cooked through.
- 7Adjust seasoning and serve hot with rice or boiled cassava.
