The Tale of Doce de Papaia
Doce de papaia follows the Lusophone tradition of doces, sugar preserves found from Brazil to Goa wherever Portuguese colonization left its mark. Sao Tome and Principe's version draws on its own abundant tropical papaya, cooked down into a simple, sweet household preserve.
Ingredients
Scale:· 6 servings
- 1 large green papaya, peeled and grated
- 300g sugar
- 1 cinnamon stick
- 2 whole cloves
- Zest of 1 lime
- 2 cups water
- 50g grated coconut (optional)
Instructions
- 1Place the grated papaya in a pot with water, cinnamon stick, and cloves.
- 2Bring to a simmer and cook for 15 minutes until the papaya softens.
- 3Add the sugar and lime zest, stirring to dissolve.
- 4Continue simmering, stirring occasionally, until the mixture thickens into a jam-like consistency, about 15-20 minutes.
- 5Stir in grated coconut if using.
- 6Remove the cinnamon stick and cloves.
- 7Cool and serve as a sweet or spread over bread.
