The Tale of Doce de Coco (Coconut Sweet)
Doce de coco, a coconut sweet, belongs to the Lusophone tradition of doces, sugar-based preserves found across the Portuguese-speaking world from Brazil to Goa. Sao Tome and Principe's version leans on its own abundant coconut supply, a simple confection passed down through island households.
Ingredients

- 2 cups grated fresh coconut
- 1 1/2 cups sugar
- 1 cup water
- 2 egg yolks
- 1 cinnamon stick
- Zest of 1 lime
Instructions
- 1Combine sugar and water in a saucepan and bring to a boil to make a syrup.
- 2Add the cinnamon stick and lime zest to the syrup.
- 3Stir in the grated coconut and cook over medium-low heat, stirring frequently.
- 4Cook until the mixture thickens and pulls away from the sides of the pan, about 15 minutes.
- 5Remove from heat and let cool slightly, then remove the cinnamon stick.
- 6Whisk in the egg yolks quickly and return to low heat for 2-3 minutes, stirring constantly.
- 7Spread the mixture into a shallow dish and let cool completely before cutting into squares.
