The Tale of Blafo de Banana

Blafo de banana belongs to the "blaff" style of cooking found across French and Portuguese Creole islands of the Atlantic, where fish or produce is simmered in a light, spiced broth. Sao Tome's version leans on the archipelago's abundant plantains and bananas as a savory, not sweet, ingredient.

Ingredients

Scale:· 6 servings
  • 6 green plantains, peeled and sliced
  • 500g chicken pieces or fish
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons palm oil
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 1 chili pepper, whole

Instructions

  1. 1Heat palm oil in a pot and brown the chicken or fish pieces lightly.
  2. 2Add onion and garlic and cook until softened.
  3. 3Stir in the tomatoes and cook until they form a sauce.
  4. 4Add the sliced plantains and enough water to partly cover.
  5. 5Add the whole chili pepper, cover, and simmer for 15 minutes.
  6. 6Pour in the coconut milk and continue cooking for another 10-15 minutes until the plantains are soft.
  7. 7Season with salt and pepper and remove the chili before serving.
  8. 8Serve warm as a main dish.
