The Tale of Arroz de Coco
Arroz de coco, coconut rice, blends Sao Tome and Principe's Portuguese colonial past with West and Central African cooking brought by enslaved and free Africans who shaped the islands' Creole cuisine. It's a simple, everyday dish that leans on the archipelago's abundant coconut palms.
Ingredients
Scale:· 4 servings
- 2 cups rice
- 1 can coconut milk
- 2 cups water
- 1 small onion, chopped
- 1 tablespoon palm oil or butter
- 1/2 teaspoon salt
- 2 tablespoons shredded coconut (optional)
Instructions
- 1Heat the palm oil in a pot and sauté the onion until translucent.
- 2Add the rice and stir to coat in the oil for a minute.
- 3Pour in the coconut milk and water, then add salt.
- 4Bring to a boil, then reduce heat to low and cover.
- 5Simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
- 6Fluff with a fork and stir in shredded coconut if using.
- 7Serve as a side to fish or meat stews.
