The Story Behind It

The Tale of Torta Tre Monti (Three Towers Cake)

Torta tre monti, "three mountains cake," is named for the three peaks of Monte Titano crowned by San Marino's iconic towers. The layered wafer-and-hazelnut-cream confection is a modern 20th-century creation, developed as a distinctly Sammarinese specialty and tourist souvenir rather than an old folk recipe.

Ingredients

Scale:· 8 servings
  • 8 round wafer sheets
  • 300g hazelnut spread
  • 150g dark chocolate, melted
  • 100g milk chocolate, melted
  • 2 tablespoons cocoa powder
  • 100g ground hazelnuts

Instructions

  1. 1Toast the ground hazelnuts lightly in a dry pan and let cool.
  2. 2Mix the hazelnut spread with the toasted ground hazelnuts and cocoa powder.
  3. 3Spread a thin layer of the hazelnut mixture over a wafer sheet.
  4. 4Stack another wafer on top and repeat until all sheets are layered, ending with a wafer.
  5. 5Press down gently and chill in the refrigerator for 1 hour to firm up.
  6. 6Melt the dark and milk chocolate together and pour over the top of the stack, letting it drip down the sides.
  7. 7Chill again until the chocolate sets completely.
  8. 8Slice into wedges to serve, mimicking the three towers of San Marino's flag.
