The Tale of Nidi di Rondine (Swallow's Nest Pasta)

Nidi di rondine, "swallow's nests," are baked pasta rolls filled with ham and cheese, named for their coiled resemblance to a bird's nest. The dish belongs to the culinary world of Emilia-Romagna, the Italian region that entirely surrounds San Marino, whose food culture the microstate largely shares.

Ingredients

  • 400g fresh lasagna sheets
  • 150g prosciutto cotto, chopped
  • 150g fontina or emmental cheese, diced
  • 200g béchamel sauce
  • 100g tomato sauce
  • 50g grated Parmesan
  • 2 tablespoons butter
  • Nutmeg to taste

Instructions

  1. 1Lay out the pasta sheets and spread a thin layer of béchamel over each.
  2. 2Sprinkle chopped prosciutto and diced cheese evenly over the béchamel.
  3. 3Roll each sheet tightly into a log, like a swallow's nest.
  4. 4Slice each rolled log into 3-4cm rounds.
  5. 5Arrange the rounds cut-side up in a buttered baking dish.
  6. 6Spoon a little tomato sauce and béchamel over each nest, then sprinkle with Parmesan.
  7. 7Bake at 200°C (400°F) for 25-30 minutes until golden and bubbling.
  8. 8Let rest 5 minutes before serving.
