The Story Behind It

The Tale of Cacciatello

Cacciatello is a simple baked custard from the Romagna countryside surrounding San Marino, made from little more than milk, eggs, and sugar. It's a rustic dessert shared between San Marino and its Italian neighbors rather than a dish unique to the microstate alone.

Ingredients

Scale:· 6 servings
  • 1 liter whole milk
  • 4 eggs
  • 150g sugar
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2Warm the milk gently but do not boil.
  3. 3In a bowl, whisk eggs with sugar until pale.
  4. 4Slowly whisk the warm milk into the egg mixture along with lemon zest and vanilla.
  5. 5Pour the custard into individual ramekins or a baking dish.
  6. 6Dust the top with a little cinnamon.
  7. 7Bake in a water bath for about 40-45 minutes until just set with a slight wobble.
  8. 8Cool completely and chill before serving.
