The Tale of Cacciatello
Cacciatello is a simple baked custard from the Romagna countryside surrounding San Marino, made from little more than milk, eggs, and sugar. It's a rustic dessert shared between San Marino and its Italian neighbors rather than a dish unique to the microstate alone.
Ingredients
Scale:· 6 servings
- 1 liter whole milk
- 4 eggs
- 150g sugar
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- Pinch of cinnamon
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Warm the milk gently but do not boil.
- 3In a bowl, whisk eggs with sugar until pale.
- 4Slowly whisk the warm milk into the egg mixture along with lemon zest and vanilla.
- 5Pour the custard into individual ramekins or a baking dish.
- 6Dust the top with a little cinnamon.
- 7Bake in a water bath for about 40-45 minutes until just set with a slight wobble.
- 8Cool completely and chill before serving.
