The Tale of Panipopo (Samoan Coconut Buns)

Panipopo, soft rolls baked in sweet coconut cream, merge Western-style bread baking, introduced through missionary and colonial contact in the 19th century, with Samoa's own deep coconut cooking tradition. The buns became a staple of church gatherings and family celebrations across Samoa.

Ingredients

  • 3 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/3 cup sugar
  • 3/4 cup warm milk
  • 2 tablespoons butter, melted
  • 1 egg
  • 1/2 teaspoon salt
  • 2 cups coconut cream
  • 1/2 cup sugar (for sauce)

Instructions

  1. 1Dissolve yeast and a pinch of sugar in warm milk and let sit 10 minutes until foamy.
  2. 2Combine flour, sugar, salt, egg, melted butter, and the yeast mixture into a soft dough.
  3. 3Knead for 8-10 minutes until smooth, then let rise covered for about 1 hour until doubled.
  4. 4Divide the dough into 12 balls and arrange them in a greased baking dish.
  5. 5Let rise again for 20 minutes while preheating the oven to 180C (350F).
  6. 6Whisk coconut cream with the extra sugar and pour evenly over the buns.
  7. 7Bake for 25-30 minutes until golden and the coconut sauce is bubbling and slightly caramelized.
  8. 8Serve warm, spooning extra coconut sauce over each bun.
