The Tale of Fa'ausi (Coconut Caramel Pudding)

Fa'ausi is a traditional Samoan dessert of grated tapioca or breadfruit bathed in a caramelized coconut cream sauce called fa'i. Like much of Samoan cooking, it has no single documented inventor; it's simply generations of Polynesian technique applied to the starchy root crops the islands provide.

Ingredients

  • 2 cups grated fresh coconut
  • 1 1/2 cups brown sugar
  • 2 cups water
  • 2 cups all-purpose flour
  • 1 cup water (for dough)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. 1Mix flour, baking soda, and salt with water into a firm dough, then knead briefly.
  2. 2Divide the dough into small balls and flatten into thick discs.
  3. 3Boil the discs in water for 15-20 minutes until cooked through, then drain.
  4. 4Meanwhile, simmer brown sugar with 2 cups water until it forms a thick syrup.
  5. 5Stir the grated coconut into the syrup and cook 5 minutes until fragrant.
  6. 6Arrange the cooked dough discs in a serving dish.
  7. 7Pour the hot coconut caramel sauce generously over the top.
  8. 8Serve warm as a dessert or afternoon snack.
