The Story Behind It

The Tale of Fa'alifu Fa'i (Bananas in Coconut Cream)

Fa'alifu fa'i, bananas simmered in coconut cream, uses the starchy cooking bananas central to Samoan cuisine, prepared in an ancient Polynesian style whether over a stovetop or in an umu earth oven. It reflects deep, pre-colonial Samoan technique rather than any documented single origin.

Ingredients

Scale:· 4 servings
  • 6 green cooking bananas or plantains, peeled
  • 2 cups coconut cream
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • Ground black pepper to taste
  • Water for boiling

Instructions

  1. 1Cut the bananas into thick chunks.
  2. 2Boil the bananas in salted water until just tender, about 10 minutes, then drain.
  3. 3In a saucepan, heat coconut cream with chopped onion and salt over low heat.
  4. 4Add the boiled bananas to the coconut cream.
  5. 5Simmer gently for 8-10 minutes, spooning the cream over the bananas, until they absorb the flavor.
  6. 6Serve warm as a side dish alongside grilled fish or meat.
