The Tale of Sweet Potato Pudding
This steamed or baked spiced pudding belongs to the wider Caribbean tradition of root-vegetable puddings, shared with similar dishes across Jamaica and other islands. Often made for holidays and special occasions, it reflects the region's African and indigenous culinary blending.
Ingredients

- 2 lbs sweet potatoes, peeled and grated
- 1 cup grated coconut
- 1 cup coconut milk
- 1 cup brown sugar
- 1/2 cup melted butter
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup raisins
- 1 tsp vanilla extract
- 1/2 cup flour
Instructions
- 1Preheat oven to 350°F (175°C) and grease a baking dish.
- 2Combine grated sweet potato and grated coconut in a large bowl.
- 3Stir in coconut milk, brown sugar, melted butter, cinnamon, nutmeg, vanilla, and flour, mixing until well combined.
- 4Fold in raisins.
- 5Pour the mixture into the prepared baking dish, spreading evenly.
- 6Bake for about 60-70 minutes until set, firm in the center, and golden brown on top.
- 7Let cool slightly before slicing into squares.
- 8Serve warm or at room temperature.
