The Tale of Sweet Potato Pudding

Ingredients

  • 2 lbs sweet potatoes, peeled and grated
  • 1 cup grated coconut
  • 1 cup coconut milk
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup raisins
  • 1 tsp vanilla extract
  • 1/2 cup flour

Instructions

  1. 1Preheat oven to 350°F (175°C) and grease a baking dish.
  2. 2Combine grated sweet potato and grated coconut in a large bowl.
  3. 3Stir in coconut milk, brown sugar, melted butter, cinnamon, nutmeg, vanilla, and flour, mixing until well combined.
  4. 4Fold in raisins.
  5. 5Pour the mixture into the prepared baking dish, spreading evenly.
  6. 6Bake for about 60-70 minutes until set, firm in the center, and golden brown on top.
  7. 7Let cool slightly before slicing into squares.
  8. 8Serve warm or at room temperature.
