The Story Behind It

The Tale of Saltfish Accras

Saltfish accras are found across the French-influenced Caribbean, with the name derived from West African terms for fritters, related to the Yoruba 'akara,' carried across the Atlantic during the slave trade. They were later adapted throughout the francophone Antilles, including Saint Lucia.

Ingredients

Scale:· 6 servings
  • 1/2 lb salted codfish
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 onion, finely chopped
  • 2 scallions, chopped
  • 1 clove garlic, minced
  • 1 hot pepper, finely chopped
  • 1 cup water
  • oil, for deep frying
  • black pepper, to taste

Instructions

  1. 1Soak salted codfish in water for several hours, changing water occasionally, then drain and finely shred or flake, removing bones and skin.
  2. 2Combine flour and baking powder in a bowl, then whisk in water gradually to form a thick batter.
  3. 3Stir in the flaked saltfish, onion, scallions, garlic, hot pepper, and black pepper.
  4. 4Heat oil to about 350°F (175°C) in a deep pan.
  5. 5Drop spoonfuls of batter into the hot oil, frying in batches until golden brown and cooked through, about 3-4 minutes, turning once.
  6. 6Drain on paper towels.
  7. 7Serve hot as an appetizer or snack, with a spicy dipping sauce.
