The Tale of Coconut Bakes
Coconut bakes, simple fried or baked coconut-milk bread, belong to the wider Caribbean 'bake' tradition of quick breads shaped by British and West African baking styles applied to local coconut. They remain a breakfast staple across the Eastern Caribbean.
Ingredients

- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 1/2 cup grated coconut
- 3/4 cup coconut milk
- oil, for frying
Instructions
- 1Mix flour, baking powder, salt, sugar, and grated coconut in a bowl.
- 2Gradually add coconut milk, mixing until a soft dough forms.
- 3Knead briefly until smooth, then let rest covered for about 20 minutes.
- 4Divide dough into small balls and flatten each into a disk.
- 5Heat oil in a skillet over medium heat and fry bakes for 3-4 minutes per side until golden brown and cooked through.
- 6Drain on paper towels.
- 7Serve warm, split open with butter, cheese, or saltfish filling.
