The Tale of Coconut Bakes

Coconut bakes, simple fried or baked coconut-milk bread, belong to the wider Caribbean 'bake' tradition of quick breads shaped by British and West African baking styles applied to local coconut. They remain a breakfast staple across the Eastern Caribbean.

Ingredients

Scale:· 6 servings
  • 2 cups flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1/2 cup grated coconut
  • 3/4 cup coconut milk
  • oil, for frying

Instructions

  1. 1Mix flour, baking powder, salt, sugar, and grated coconut in a bowl.
  2. 2Gradually add coconut milk, mixing until a soft dough forms.
  3. 3Knead briefly until smooth, then let rest covered for about 20 minutes.
  4. 4Divide dough into small balls and flatten each into a disk.
  5. 5Heat oil in a skillet over medium heat and fry bakes for 3-4 minutes per side until golden brown and cooked through.
  6. 6Drain on paper towels.
  7. 7Serve warm, split open with butter, cheese, or saltfish filling.
