Ingredients

  • 3 lbs goat meat, bone-in, cut into chunks
  • 2 tbsp browning sauce
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 2 scallions, chopped
  • 1 scotch bonnet pepper, whole
  • 1 tbsp fresh thyme
  • 2 whole cloves (spice)
  • 3 tbsp all-purpose flour
  • 8 cups water
  • 2 tbsp vegetable oil
  • Salt and black pepper to taste

Instructions

  1. 1Season the goat meat with garlic, onion, thyme, salt, and pepper, and marinate at least 1 hour.
  2. 2Heat oil in a large pot and brown the goat meat well in batches with the browning sauce.
  3. 3Return all meat to the pot, add water, whole cloves, scallions, and the whole scotch bonnet pepper, and bring to a boil, skimming foam.
  4. 4Reduce heat and simmer 1.5 to 2 hours until the meat is very tender.
  5. 5Whisk the flour with a little cold water to make a slurry, then stir into the pot to thicken the broth slightly.
  6. 6Simmer another 10 minutes, adjusting seasoning with salt and pepper.
  7. 7Remove the scotch bonnet pepper and serve hot in bowls as a hearty stew, a beloved Kittitian specialty.
