Ingredients
- 3 lbs goat meat, bone-in, cut into chunks
- 2 tbsp browning sauce
- 1 onion, chopped
- 6 cloves garlic, minced
- 2 scallions, chopped
- 1 scotch bonnet pepper, whole
- 1 tbsp fresh thyme
- 2 whole cloves (spice)
- 3 tbsp all-purpose flour
- 8 cups water
- 2 tbsp vegetable oil
- Salt and black pepper to taste
Instructions
- 1Season the goat meat with garlic, onion, thyme, salt, and pepper, and marinate at least 1 hour.
- 2Heat oil in a large pot and brown the goat meat well in batches with the browning sauce.
- 3Return all meat to the pot, add water, whole cloves, scallions, and the whole scotch bonnet pepper, and bring to a boil, skimming foam.
- 4Reduce heat and simmer 1.5 to 2 hours until the meat is very tender.
- 5Whisk the flour with a little cold water to make a slurry, then stir into the pot to thicken the broth slightly.
- 6Simmer another 10 minutes, adjusting seasoning with salt and pepper.
- 7Remove the scotch bonnet pepper and serve hot in bowls as a hearty stew, a beloved Kittitian specialty.
