The Tale of Johnny Cakes
Johnny cakes, fried or baked cornmeal bread found throughout the Caribbean and coastal American South, have a disputed etymology — possibly a corruption of 'journey cake,' food suited to travel — tracing back to early colonial-era combinations of European baking technique and indigenous American corn.
Ingredients

- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 2 tbsp butter
- 3/4 cup water or milk
- oil, for frying
Instructions
- 1Mix flour, baking powder, salt, and sugar in a bowl.
- 2Rub in butter until the mixture resembles coarse crumbs.
- 3Gradually add water or milk, mixing until a soft, slightly sticky dough forms.
- 4Let the dough rest, covered, for about 20 minutes.
- 5Divide dough into small balls and flatten each into a disk about 1/2-inch thick.
- 6Heat oil in a skillet over medium heat and fry the cakes for 4-5 minutes per side until golden brown and cooked through.
- 7Drain on paper towels.
- 8Serve warm, plain or with butter, cheese, or saltfish.
