The Tale of Conkies
Conkies, a sweet cornmeal pudding steamed in banana or plantain leaves, is traditionally made around Independence Day and Bonfire Night celebrations in the Eastern Caribbean. Wrapping and steaming starch mixtures in leaves reflects a shared West African and indigenous Caribbean cooking heritage.
Ingredients

- 2 cups grated pumpkin
- 2 cups grated sweet potato
- 1 cup cornmeal
- 1 cup grated coconut
- 1/2 cup raisins
- 1 cup sugar or molasses
- 1 tsp mixed spice
- 1/2 tsp ground ginger
- 1/2 cup melted margarine or butter
- banana leaves (or foil), for wrapping
Instructions
- 1Combine grated pumpkin, sweet potato, coconut, cornmeal, raisins, sugar, mixed spice, and ginger in a large bowl.
- 2Stir in melted margarine until the mixture is evenly moistened and holds together.
- 3Cut banana leaves into squares and soften over a flame or in hot water to make pliable.
- 4Spoon a portion of the mixture onto each leaf square and fold into a secure packet, tying with string.
- 5Arrange packets in a large steamer or a pot with a small amount of water and a rack.
- 6Steam for about 1.5 hours, checking water levels periodically, until the filling is firm and cooked through.
- 7Let cool slightly before unwrapping.
- 8Serve warm as a snack or dessert.
