The Tale of Brochettes

Skewered grilled meat, often goat, became one of Rwanda's most popular street and social foods, reflecting East African grilling traditions alongside a French name that echoes the country's Belgian colonial-era ties. It's a fixture of Rwandan social gatherings today.

Ingredients

Scale:· 6 servings
  • 2 lbs goat meat or beef, cubed
  • 2 tbsp oil
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • bell peppers, cut into chunks
  • onion, cut into chunks
  • skewers

Instructions

  1. 1Marinate cubed meat with oil, garlic, salt, pepper, and paprika for at least 1 hour.
  2. 2Thread marinated meat onto skewers, alternating with chunks of bell pepper and onion.
  3. 3Preheat a grill or grill pan to medium-high heat.
  4. 4Grill skewers, turning occasionally, for about 10-15 minutes until meat is browned outside and cooked to desired doneness.
  5. 5Baste occasionally with any remaining marinade during grilling.
  6. 6Rest skewers a few minutes before serving.
  7. 7Serve hot with grilled plantains, fries, or ubugali, alongside a simple tomato-onion salad.
