Agatogo, a stew of green cooking bananas and beef, reflects Rwanda's highland agricultural tradition, where banana cultivation has been central for centuries. It's a hearty, everyday dish rooted in Rwandan home cooking rather than any documented single origin.

Ingredients

Scale:· 6 servings
  • 8 green cooking bananas, peeled and cut into chunks
  • 1 lb beef, cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 carrots, sliced
  • 2 tbsp oil
  • 1 tsp salt
  • black pepper, to taste
  • water or stock, as needed

Instructions

  1. 1Heat oil in a large pot and brown the beef cubes on all sides.
  2. 2Add onion and cook until softened, then stir in tomatoes and cook until they form a light sauce.
  3. 3Add green banana chunks and carrots, stirring to coat in the sauce.
  4. 4Pour in enough water or stock to just cover the ingredients.
  5. 5Bring to a boil, then reduce heat, cover, and simmer 30-35 minutes until the bananas are tender and the beef is cooked through.
  6. 6Mash a few banana pieces against the pot to thicken the sauce slightly if desired.
  7. 7Season with salt and pepper.
  8. 8Serve hot as a hearty one-pot meal.
