Agatogo, a stew of green cooking bananas and beef, reflects Rwanda's highland agricultural tradition, where banana cultivation has been central for centuries. It's a hearty, everyday dish rooted in Rwandan home cooking rather than any documented single origin.
Ingredients

- 8 green cooking bananas, peeled and cut into chunks
- 1 lb beef, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 carrots, sliced
- 2 tbsp oil
- 1 tsp salt
- black pepper, to taste
- water or stock, as needed
Instructions
- 1Heat oil in a large pot and brown the beef cubes on all sides.
- 2Add onion and cook until softened, then stir in tomatoes and cook until they form a light sauce.
- 3Add green banana chunks and carrots, stirring to coat in the sauce.
- 4Pour in enough water or stock to just cover the ingredients.
- 5Bring to a boil, then reduce heat, cover, and simmer 30-35 minutes until the bananas are tender and the beef is cooked through.
- 6Mash a few banana pieces against the pot to thicken the sauce slightly if desired.
- 7Season with salt and pepper.
- 8Serve hot as a hearty one-pot meal.
