Ingredients
- 2 lb pork trotters and knuckles
- 1 lb chicken thighs
- 2 carrots, whole
- 1 onion, whole
- 4 cloves garlic, minced
- 2 bay leaves
- 10 black peppercorns
- Salt
- Hard-boiled eggs and parsley, for garnish
- Mustard or horseradish, for serving
Instructions
- 1Place pork trotters, chicken, carrots, and onion in a large pot and cover with water.
- 2Bring to a boil, skim the foam, then reduce heat and simmer gently, covered, for 4 hours, until the meat falls off the bone.
- 3Remove the meat and vegetables, strain the broth, and season with garlic, bay leaves, peppercorns, and salt.
- 4Shred the meat, discarding bones and skin, and discard the boiled onion.
- 5Slice the carrots and arrange them with the shredded meat in serving dishes or a loaf pan.
- 6Pour the strained broth over the meat and refrigerate at least 6 hours, or overnight, until fully set.
- 7Unmold or slice, garnish with hard-boiled egg and parsley, and serve cold with mustard.
