The Tale of Luqaimat
These date-syrup-drizzled fried dumplings are a beloved Ramadan treat shared across the Gulf. Food historians see a likely connection to Indian gulgula fritters, carried into the region through centuries of Indian Ocean trade.
Ingredients
Scale:· 6 servings
- 2 cups all-purpose flour
- 1 tbsp yeast
- 2 tbsp sugar
- 1/4 tsp cardamom
- 1/4 tsp saffron
- 1.5 cups warm water or milk
- 1/2 tsp salt
- oil, for deep frying
- date syrup, for drizzling
- sesame seeds, for garnish
Instructions
- 1Whisk yeast and sugar into warm water or milk and let sit 5-10 minutes until foamy.
- 2Combine flour, salt, cardamom, and saffron in a bowl, then whisk in the yeast mixture to form a smooth, thick, pourable batter.
- 3Cover and let rise in a warm place for about 1 hour until bubbly.
- 4Heat oil to 350°F (175°C) in a deep pan.
- 5Scoop small portions of batter and drop carefully into the hot oil.
- 6Fry, turning occasionally, until golden brown and puffed, about 3-4 minutes.
- 7Drain on paper towels.
- 8Drizzle generously with date syrup and sprinkle with sesame seeds before serving warm.
