The Tale of Tostones

Twice-fried green plantains reflect a Caribbean-wide blend of African culinary technique, carried in part through the transatlantic slave trade alongside earlier Taino cultivation, with Spanish frying methods. Tostones remain a staple side dish throughout Puerto Rico and the wider Caribbean.

Ingredients

Scale:· 4 servings
  • 3 green plantains, peeled
  • oil, for frying
  • salt, to taste
  • 2 cups water
  • 1 tbsp vinegar
  • 1 clove garlic, minced
  • garlic powder, to taste
  • lime wedges, for serving

Instructions

  1. 1Cut plantains into 1-inch thick rounds.
  2. 2Fry in hot oil over medium heat for 3-4 minutes per side until softened but not browned; remove.
  3. 3Using a tostonera or the bottom of a flat glass, flatten each piece into a thick disk.
  4. 4Dip flattened plantains briefly in the vinegar-salted water.
  5. 5Return to the hot oil and fry a second time until golden and crisp, about 2-3 minutes per side.
  6. 6Drain on paper towels and sprinkle with salt.
  7. 7Serve hot with garlic mayo or ajilimójili sauce.
