The Story Behind It

The Tale of Francesinha

Story updated

Francesinha, Porto's hearty layered sandwich smothered in melted cheese and a spiced tomato-beer sauce, was created in the 1950s-60s by Daniel da Silva, a Portuguese emigrant who had returned from France or Belgium and adapted the French croque monsieur into a bigger, bolder local version. Its name, 'little Frenchie,' nods directly to that inspiration.

Ingredients

Scale:· 4 servings
  • 8 slices sandwich bread
  • 8 slices ham
  • 4 fresh sausages (linguiça)
  • 4 slices steak or roast pork
  • 8 slices cheese (mild yellow cheese)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 cup beer
  • 1 cup tomato sauce
  • 2 tbsp piri-piri or hot sauce
  • 1 fried egg per sandwich (optional)

Instructions

  1. 1Cook steak, sausages, and any additional meats until done.

  3. 3Assemble sandwiches by layering ham, sausage, and steak between bread slices.
  4. 4Cover each sandwich completely with slices of cheese.
  5. 5Place under a broiler until the cheese melts and drapes over the sides.
  6. 6Pour the hot beer sauce generously over the sandwich and top with a fried egg if desired.
