The Tale of Flaki

Story updated

Flaki, a tripe soup seasoned with marjoram and other spices, has been documented in Polish cooking since at least the medieval period, historically valued as a way to use every part of the animal. It remains a beloved, if polarizing, traditional soup.

  • 2 tbsp butter
  • 1 tsp marjoram
  • 1/2 tsp ground ginger
  • Pinch of nutmeg
  • Salt and black pepper
  • Grated parmesan, for serving

Instructions
