Ingredients

  • 3 lbs pork, cut into large pieces
  • 4 sweet potatoes (kaukau), peeled
  • 2 cassava roots, peeled
  • 1 bunch greens (aibika or pumpkin tips)
  • Banana leaves, for lining
  • Salt, to taste

Instructions

  1. 1Dig a pit and heat stones over a large fire until white-hot, about 1.5-2 hours.
  2. 2Line the pit with banana leaves once the stones are ready.
  3. 3Layer the pork, sweet potatoes, cassava, and greens over the hot stones, seasoning with salt as you go.
  4. 4Fold the banana leaves over the food to enclose it completely.
  5. 5Cover with soil or heavy stones to trap the steam and heat.
  6. 6Leave to cook for 2.5-3 hours undisturbed.
  7. 7Uncover carefully and serve the smoky pork and vegetables together.
