Sinigang na Baboy (Sour Pork Soup)

Ingredients

  • 2 lbs pork ribs, cut into pieces
  • 8 cups water
  • 2 tomatoes, quartered
  • 1 onion, quartered
  • 1 packet tamarind soup base or fresh tamarind pulp
  • 2 cups radish, sliced
  • 2 cups long beans, cut into pieces
  • 2 cups water spinach (kangkong)
  • 2 green chilies
  • Fish sauce, to taste

Instructions

  1. 1Simmer pork ribs in water with tomatoes and onion for 45 minutes until tender, skimming foam as needed.
  2. 2Stir in the tamarind soup base or tamarind pulp until dissolved, adjusting for a balanced sour flavor.
  3. 3Add radish and simmer for 5 minutes until slightly softened.
  4. 4Add long beans and green chilies and simmer another 5 minutes.
  5. 5Stir in the water spinach and cook just until wilted.
  6. 6Season with fish sauce to taste and serve hot with steamed rice.
