The Tale of Pancit Canton
Pancit reflects centuries of Chinese immigration and trade in the Philippines; the word derives from the Hokkien term for 'something conveniently cooked.' Noodles are traditionally eaten for birthdays to symbolize long life, a custom borrowed from Chinese tradition and fully adopted into Filipino celebration food.
Ingredients

- 1 lb pancit canton (wheat noodles)
- 1/2 lb pork, sliced thin
- 1/2 lb shrimp, peeled
- 3 cups shredded cabbage
- 1 cup sliced carrots
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 onion, sliced
- 1/4 cup soy sauce
- 3 cups chicken broth
- 2 tbsp oyster sauce
- 3 tbsp cooking oil
Instructions
- 1Soak noodles in warm water until pliable, then drain.
- 2Heat oil in a wok and sauté garlic and onion until fragrant.
- 3Add pork and cook until browned, then add shrimp and cook until pink.
- 4Pour in chicken broth, soy sauce, and oyster sauce; bring to a simmer.
- 5Add carrots and cabbage, cooking until just tender-crisp.
- 6Add drained noodles, tossing to coat and absorb the liquid, cooking 5-7 minutes.
- 7Stir in snap peas and cook 1-2 minutes more.
- 8Serve hot with calamansi or lemon wedges on the side.
