The Tale of Pancit Bihon (Stir-Fried Rice Noodles)
Story updated
Pancit traces to noodle dishes brought by Chinese traders and immigrants centuries ago; the name itself likely derives from the Hokkien phrase for 'convenient food.' Filipino cooks adapted the noodles with local ingredients and flavors, and pancit became deeply tied to birthday celebrations, where the long noodles symbolize a long life.

Scale:· 6 servings
- 1 lb rice vermicelli (bihon), soaked
- 1/2 lb chicken breast, sliced
- 1/4 lb pork, sliced

- 2 cups cabbage, shredded
- 1 carrot, julienned
- 1/2 cup snow peas
- 4 cups chicken stock
- 1/4 cup soy sauce
- 2 tbsp fish sauce
- Calamansi or lemon wedges, for serving
Instructions
