The Story Behind It

The Tale of Halo-Halo

Halo-halo, meaning 'mix-mix' in Tagalog, is believed to have evolved from Japanese kakigori-style shaved ice desserts introduced by Japanese immigrants to the Philippines in the early 20th century. It was later Filipinized with ingredients like ube, sweet beans, and leche flan.

Ingredients

Scale:· 4 servings
  • 4 cups shaved ice
  • 1 cup evaporated milk
  • 4 tbsp sweetened red mung beans
  • 4 tbsp sweetened white beans or garbanzos
  • 4 tbsp sweetened saba banana, sliced
  • 4 tbsp sweetened jackfruit strips
  • 4 tbsp sugar palm fruit (kaong) or nata de coco
  • 4 scoops purple yam (ube) jam
  • 4 scoops leche flan, cubed

Instructions

  1. 1In each tall glass, layer spoonfuls of sweetened beans, banana, jackfruit, and kaong or nata de coco.
  2. 2Add a scoop of ube jam and a few cubes of leche flan on top of the mixed fruits.
  3. 3Fill the glass generously with shaved ice, mounding it above the rim.
  4. 4Pour evaporated milk over the ice just before serving.
  5. 5Top with an extra scoop of ube jam and a piece of flan for garnish.
  6. 6Serve immediately with a long spoon, mixing everything together before eating.
