Ingredients

  • 1 lb chicken pieces or beef, cubed
  • 1 cup cornmeal
  • 1/2 cup grated cheese
  • 1 egg
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 8 cups chicken or beef broth
  • Chopped parsley, for garnish
  • Salt and pepper, to taste

Instructions

  1. 1Simmer the chicken or beef in broth with onion, garlic, and tomato until tender, about 25 minutes.
  2. 2Meanwhile, combine cornmeal, grated cheese, egg, and a pinch of salt into a thick paste.
  3. 3Roll the cornmeal mixture into small balls (the "bori bori" dumplings).
  4. 4Drop the dumplings into the simmering broth and cook for 10-12 minutes until they float and are cooked through.
  5. 5Season the soup with salt and pepper.
  6. 6Ladle into bowls, making sure to distribute meat and dumplings evenly, and garnish with parsley.
