The Tale of Maftoul (Palestinian Rolled Couscous with Chicken)

Maftoul, hand-rolled pellets of bulgur wheat sometimes called 'Palestinian couscous,' has been documented in Palestinian villages for generations, traditionally rolled communally by women. It's served with chicken and chickpeas at family and community gatherings.

Ingredients

Scale:· 6 servings
  • 3 cups maftoul (Palestinian pearl couscous)
  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 1 cup cooked chickpeas
  • 3 tablespoons olive oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon turmeric
  • 4 cups chicken stock
  • Salt and pepper to taste

Instructions

  1. 1Heat the olive oil in a large pot and saute one chopped onion until softened.
  2. 2Add the chicken pieces and brown lightly on all sides.
  3. 3Stir in the cinnamon, allspice, turmeric, salt, and pepper, coating the chicken well.
  4. 4Pour in the chicken stock, bring to a boil, then reduce heat and simmer for 30-35 minutes until the chicken is fully cooked and tender.
  5. 5Remove the chicken and set aside, keeping the seasoned broth simmering.
  6. 6Add the maftoul pearls and cooked chickpeas to the simmering broth, cover, and cook for 12-15 minutes, stirring occasionally, until the pearls are tender but still have a slight chew.
  7. 7In a separate small pan, saute the remaining chopped onion in a little oil until deeply caramelized for garnish.
  8. 8Spoon the maftoul onto a large platter, top with the chicken pieces and caramelized onions, and serve hot.
