The Tale of Palauan Coconut Fish Soup
This coconut fish soup reflects Palau's Micronesian reliance on reef fish and coconut, staples of the island diet for generations. Like much everyday Palauan cooking, it carries no single documented point of origin, but belongs to a broader Pacific Islander culinary tradition.
Ingredients

- 600 g reef fish fillets, cut into chunks
- 2 cups coconut milk
- 2 cups fish stock or water
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 inch ginger, sliced
- 2 tomatoes, chopped
- 1 bunch bok choy or local greens, chopped
- 1 lime, juiced
- 1 chili pepper, sliced
- Salt to taste
Instructions
- 1Heat a splash of oil in a pot and saute the onion, garlic, and ginger until fragrant.
- 2Add the chopped tomatoes and cook until they begin to soften and release their juices.
- 3Pour in the fish stock and coconut milk, and bring to a gentle simmer, not a rolling boil.
- 4Add the fish chunks and sliced chili, and simmer gently for 8-10 minutes until the fish is just cooked through.
- 5Stir in the chopped greens and cook for another 2-3 minutes until wilted.
- 6Season with salt to taste and finish with a squeeze of fresh lime juice.
- 7Ladle into bowls and serve hot with steamed rice.
